SILVER MOON DISTILLERY

Silver Moon Distillery is a Sydney-based, boutique, Vodka, Gin, and Whisky operation. We are a core team of three entrepreneurs, Distiller, Financial Controller, and Sales and Marketing Manager. Our bespoke products are “Vortex” Vodka, “Argent” Gin, and “Wiccan” Single Malt Whisky. All spirits are grain distilled.

Layla, the “distilling chick”, has over a decade long history in environmental science and distilling. Similarly Nick, the “money guy”, has a strong background in accounting, financial modelling, and business development. Sam, the “sales shark”, is long experienced in Technology and Sales. All three hold Masters Degrees.

The operation is located in Wetherill Park, Sydney. We have a licensed Still and Bond Store within an industrial unit. The Still comprises of a 380 litre kettle, a 200ml six plate column, a 200ml gin basket, and a 100ml condenser.

Our spirits all share the French, Saver Glass Company’s Pearl 700ml bottle. Each bottle will be finished off with a Portuguese Decanter style stopper with a tamper proof label. The bottle neck will have a collar, leading to a silver foil emblem, and finally the bottle label. Each stopper and the label colours will distinguish the spirits with Vodka in Black with Silver print, Gin in Blue with Silver print and Whisky in Red with Silver print.

The strategy is to expand the range to include a 100ml and 300ml offering of the same 40% ABV for Vodka and Gin, and 43% ABV for whisky. Further, we will look at a 60% ABV, 500ml bottle of Russian Strength Vodka, Sailor Strength Gin, and Barrel Strength Whisky.

The distillery, as of October, is fully funded and awaiting approval of the Development Application from Fairfield City Council. All Excise Licencing and Bond Store requirements for the site have been issued from The Australian Tax Office. Final installation is expected to start later this year, with full production projected for February next year. All recipes have been fine-tuned over the years and fully trialled and documented.
